Greek-style Orzo Salad. What kind of dressing?

I am going to make a light, layered salad for a side tonight, for dinner.



-Orzo

-Chopped watercress

-Diced Tomatoes

-Feta cheese, crumbled



What dressing should I use?



I was going to buy one of those Greek Dressings from the store, but thought making my own would taste better.



Simple lemon and oil?

White Balsamic Vinegar and oil?



What would you do?

Greek-style Orzo Salad. What kind of dressing?
1/4 cup chopped fresh parsley

1 tablespoon lemon juice

1/2 teaspoon dried oregano

1/2 teaspoon lemon pepper





Toss and chill for 1 hour in refrigerator.
GREEK SALAD DRESSING



1/2 c. olive oil

1/4 c. white vinegar

1/4 c. fresh lemon juice

1/4 tsp. salt

1/2 tsp. pepper

1 tbsp dried whole oregano

2 small cloves garlic, minced





Combine all ingredients in a jar; cover tightly and shake vigorously. Chill dressing at least 2 hours. Shake again just before serving. (YIELD 2 CUPS)

or you could try this one...its pretty similar to the first one but it uses an envelope of Italian salad dressing mix...



GREEK DRESSING



3 tbsp. lemon juice

3 tbsp. water

1 env. Good Seasons Italian salad dressing mix

2/3 c. olive oil

1/2 tsp. oregano

I would use the olive oil and white balsamic vinegar with salt,pepper and a touch of sugar.
