How do u make greek dressing?

For example what type of vinegar and what type of oil would I use.I tried all those other "Greek dressings" the store sells and it doesn't fit my needs.I'm a huge sucker for Greek salads so I'd like to get it right and enjoy it!!How do u make greek dressing?
Use olive oil in the first place, balsamic vinegar or just vinegar, oregano, salt and pepper . As simple as that. You can replace the vinegar with lemon juice.
Real Greek cooking is simple, and often has only a few ingredients per recipe and good Greek cookbooks are hard to come by. Allot of traditional recipes just call for meat, olive oil, lemon juice, and salt and pepper. Dont use just one type of vinegar either. They use red and white also in Greece. Try using lemon juice for a change instead sometimes.



Tzatsiki sauce is a good one to have around. You can use it as a spread or a dressing. Its yogurt, lemon juice, cucumbers, mint, salt, and just a little cumin and Cayenne pepper. Puree the peeled cucumbers with everything but the yogurt, then fold the mixture into the yogurt.



For a salad dressing I would use olive oil, lemon juice, chopped fresh oregano or marjoram (marjoram has a stronger and more oily kind of perfume quality to it), garlic, salt and pepper. Just mix it all together or toss it in a food processor if you have one.

I use red wine vinegar, lemon juice, fresh garlic, oregano (dried), salt, pepper, a dash of sugar and some chopped parsley, then I use half veg oil and some or half olive oil, I keep this in a jar shake it when I need it, you can make small amount but it does get better the longer it sits.
