Looking for a good Greek salad dressing. Must have feta and kalamata olives, of course. Spicier the better!?

Greek Salad





If you're used to eating vinegar-based Greek salads, this traditional version--made with lemon juice--will be a delightful change. Prep Time: about 30 minutes. Notes: You can prepare through step 2 up to 4 hours ahead; cover and chill vegetables and dressing separately. Just before serving, pour cucumber mixture into a colander to drain off any liquid, then return to bowl and mix with feta cheese and dressing.



2 English cucumbers, cut into 1/2-inch cubes

2 pounds tomatoes, cored and cut into 1/2-inch cubes

1 medium red onion, chopped, then rinsed and drained

1 1/3 cups coarsely chopped parsley

1 1/3 cups drained pitted kalamata olives, halved if large

1/2 cup extra-virgin olive oil

1/2 cup lemon juice

1 1/2 teaspoons dried oregano

1 pound feta cheese

Salt and fresh-ground pepper



1. In a large bowl, combine cucumbers, tomatoes, onion, parsley, and olives.

2. In a small bowl, mix olive oil, lemon juice, and oregano.



3. Break feta cheese into about 1/2-inch chunks and add to cucumber mixture. Add dressing and mix gently, adding salt and pepper to taste.

Dressing



1 cup olive oil

3 teaspoons garlic powder

3 teaspoons dried oregano

3 teaspoons dried basil

2 teaspoons ground black pepper

2 teaspoons salt

2 teaspoons onion powder

1 teaspoon ground mustard

1 teaspoon rosemary

1 1/3 cups red wine vinegar





Simply pour all ingredients into a container (bottle is best).

Shake vigorously untill well mixed.

Super Easy Greek salad



Romaine Lettuce

Red Onion, thinly sliced

Kalamata Olives

Pepperocini

Feta Cheese (the more the better)



For the dressing I like to buy kraft Greek vinaigrette and add a little crushed red pepper flake .
well,basically,you use feta ,olives,onion,tomato,cucumber,olive oil,oregano and about 2 tablespoons of water[depends how big the salad is][don't want to make it watery!!!!]Looking for a good Greek salad dressing. Must have feta and kalamata olives, of course. Spicier the better!?
GREEK SALAD AND DRESSING



1 or 2 heads lettuce

5 thinly sliced radishes

1 bunch chopped green onions

1 c. Feta cheese

1 c. black or Greek olives

1 sm. can anchovies, drained (optional)



DRESSING:



1 tbsp. oregano

1 tsp. parsley

5 tbsp. olive oil

2 to 3 tsp. vinegar

Garlic powder

Salt and pepper to taste



Salad: Mix lettuce, radishes, green onions, black or Greek olives, and anchovies (optional) in a large bowl. Crumble Feta cheese on top of salad.

Dressing: Mix together oregano, parsley, olive oil, vinegar, garlic, powder, salt, and pepper. Pour over salad.
