a good red wine vinaigrette would work perfectly.
its usually a three two one ratio. 3 parts red wine vinegar to 1 part olive oil Use a good quality extra virgin olive oil.
then season to taste with salt and pepper. I like mine with a little dash of dijon mustard. It helps keep the dressing mixed and keeps the oil and water from separating.
I used dried oregano. Add it to suit your tastes. I sometimes spice it up with red pepper flake. You can extra fancy and add some minced garlic and minced shallot. I have even used just a pinch of sugar to help balance out the flavor. To mix, i just put all the ingredients in a jar with a solid fitting lid. Then I just shake. You can play around with the amount of vinegar. I like mine tart. you may like it more subtle.
