How can I thicken up my Greek salad dressing?

I have followed a recipe for a homemade Greek salad dressing, but it comes out really thin when I pour it. I realize there's a lot of oil in it, but is there some way to thicken it? Or, is there an ingredient that I should be adding a lot more of in order to make it thicker?How can I thicken up my Greek salad dressing?

Here are three suggestions for you:



1) egg yolk - raw or hard boiled will work too, the lecithin in the yolk mixes with both oil and water %26amp; will thicken your dressing a little, just beat it into the dressing.

2) xanthan gum or guar gum -- find in a health food store and put some in a salt shaker. Shake a little into your dressing and stir well

3) Make your salad dressing as if it were a mayonnaise: yolks, mustard, some of your vinegar, and then start whisking, adding dribbles of oil and then wisking again. Add the rest of your vinegar. Adjust the thickness by adding more oil or more vinegar, lemonjuice, or even water.

Wish you would had posted the Greek salad dressing recipe. Most recipes are just oil, vinegar, some herbs and occasionally mustard, and are pretty runny

Try making it in a blender or mixer. Mix or blend all your ingredients, except the olive oil. Add the olive oil very slowly with the blender running, or beat well after each addition of olive oil. Most blenders have a little cup or something in the cover that can be removed and you pour the oil through the hole. If it's simply oil and vinegar with some herbs, it isn't going to get thick, not like the stuff you buy in a bottle. They add stuff to bottled salad dressing that you and I don't have around our kitchens, so it thickens and doesn't separate in the bottle. If you shake or beat the oil and vinegar, it will thicken a little but will soon separate back into oil and vinegar. Put it on the salad right after mixing it, toss right away.
What you need

Red wine vinegar dressing

60ml (1/4 cup) extra virgin olive oil

2 tbs red wine vinegar

1 tsp dried oregano leaves

Salt %26amp; freshly ground black pepper



How to

To make the dressing, place the oil, vinegar and oregano in a small bowl, and stir to combine. Taste and season with salt and pepper.
