l love salad greek and mix salad whats a good and tasty dressing that i can put on it.Whats a good dressing for a salad?
In Greece a true Greek salad is served without lettuce. Here is one that will lend itself well to cooked chicken, shrimp or even turkey sprinkled on top, which of coarse will not make it a true Greek salad lol!. This is my own recipe, I hope you enjoy it as much as my family does. This salad must be chilled for a minumum of 2 hours before serving, don't even bother eating it before the 2 hours, this salad will take on a whole different flavor when chilled!
The dressing ingredients may be doubled.
1 lb tomatoes, seeded and chopped
1 large cucumber, peeled, seeded and chopped
1 large red bell pepper, sliced thinly
1-2 cup kalamata olives
1 small red onion, sliced thinly
6 tablespoons olive oil
3 tablespoons red wine vinegar
1 teaspoon dried oregano (more if desired)
1 tablespoon grated parmesan cheese (optional)
1 teaspoon sugar
salt and black pepper
1 1/2 cups crumbled feta cheese (use more if desired)
fresh lemon juice
In a blender or using a whisk, mix together olive oil, red wine vinegar, oregano, Parmesan cheese (if using) salt and pepper, if needed add in 1 teaspoon sugar.
In a medium bowl place cucumbers, red bell pepper, olives, sliced red onion and about half of the feta cheese.
Pour the dressing over; toss well to combine, adding in more dried oregano if desired.
Cover and chill for 2 hours.
Top with remaining feta cheese then drizzle fresh lemon juice on top if desired before serving.
Delicious!

The traditional Greek salad dressing is pretty easy to make--look the exact recipe up on the Internet. It's fresh squeezed lemon juice, oil and dried oregano. I like the Good Seasons Italian. You buy a kit that contains the carafe that has marks on it so you know how much oil, vinegar and water to add to make the envelope of dressing mix. To the mixed dressing I add about a tablespoon of mayonnaise for creamy Italian. You have to shake it up real well.
I like this dressing
1/4 c lemon juice - fresh
1 tsp Dijon mustard
2 pressed/minced garlic cloves (I use more)
1 tsp sugar
1/4 tsp fresh coarsely ground black pepper
1/4 c fresh grated Pecorino Romano or Parmigiano-Reggiano Parmesan cheese
3/4 cup extra virgin olive oil or veg oil
Chill before serving
for a Greek salad use something not creamy. Cheese is good, but not creamy. Stay in the oil and vinegar neighborhood. OMG soo good!!! LOL I'm hungry now ;)
Yum!!

Buttermilk ranch dressing is my favorite. I make it fresh at home with a Hidden Valley Ranch dry seasoning packet, 1 and 1/2Cups of buttermilk and 1/2Cup of mayonnaise. My whole family loves it.
equal parts of olive oil and red wine vinegar, some salt and pepper, fresh or dried herbs of your choice and Parmesan cheese if you want.
I LOVE, Italian, Cesar, and especially raspberry vinaigrette. It's great.
A classic dressing is with olive oil and balamico vinegar a little salt, pepper and water. Add garlic or herb if you like
Ranch goes good with everything
