Does anyone know where I can find a simple recipe for an Asian chicken salad? I want to grill some chicken breasts, i have some lettuce, I'm not sure what type of cheese (if any) i should use. I know instead of croutons i want to use those Asian noodles. I'm not sure what type of dressing to top it with either. I don't want Mandarin oranges. I may just try making my own and seeing how it goes.

No cheese in an Asian style salad...they don't use cheese. Chop or hand shred the chicken over a bed of chopped or shredded lettuce and cabbage combined. Top with roasted sesame seeds or slivered almonds, won ton crisps and chopped green onions. Try Ken's Steakhouse Asian Sesame Dressing (or any similar Asian dressing from the store). I use just a bit of it drizzled over the top of the chicken, then splash on some Japanese style rice vinegar and drizzle with sesame oil (from the asian foods aisle), sprinkle with pepper to taste, then toss lightly.
This is my favorite Chinese Chicken Salad recipe:
CHINESE CHICKEN SALAD
Salad:
6 c finely shredded cabbage
1 1/2 c cubed cooked chicken breast
1 green onion - thin sliced
1 (3 oz) pkg top ramen noodle soup mix
2 tsp sesame seeds - toasted
3 T sliced or chopped almonds - toasted
Dressing:
1/3 c sugar
1/3 c cider vinegar
salt and pepper to taste
2-3 drops sesame oil
Combine all dressing ingredients and mix well. Set aside. Combine cabbage, chicken, and onion. Toss to mix. Crumble noodles - saving the packet for another use. Add the noodles, almonds and sesame seed to the cabbage mix. Add the dressing and toss to coat. Makes 5 (1 2/3 c) servings.

honestly, normally Asian salads don't use lettuce, they use bok choy, nampa, or regular cabbage.

It's a long list and would probably irritate you because you'll have to comb through it to see what appeals to you. The good thing is that they're rated and many of them have reviews.
