It's a greek-ish chicken dish; I am marinating chicken breast in greek salad dressing and will saute it in nothing but the dressing, then I cut up for fresh garlic and tomatoes mixed with a little olive oil that I will saute after and put on top of the chicken after. Sound yummy?
Should I just serve a chicken rice or chicken rice and salad with it?How does this sound? Just made it up?
It sounds great, but can you get your hands on any fresh oregano leaves and chop them up to put in the tomato salad? If you like cucumbers, I would slice some cucumber up and add it to the salad.
Maybe it's just me, but I'd cook the rice plain (or with the tiniest bit of grated lemon zest) because you have so many delicious strong Greek flavors in the rest of your meal. Really good Greek brine-cured olives are a must too, but in a bowl on the side, and something very light and lemony (sorbet, maybe?) for dessert. Sounds fantastic--can I come over? :)

Rice and salad would be wonderful!
Sounds great-some of the best dishes are your own home experiments. Chicken rice would be a perfect side-salad with a little feta cheese thrown on top and some olives would make it a true homemade Greek dinner.
