i want to lose about 20 lbs by the beginning of May. I'm 5'2 and 140 lbs right now.
If i went on the following diet...would i lose weight?
Typical Day:
Breakfast: protein bar
Lunch: Greek Salad with minimal dressing
Snack: apple
Dinner: Grilled Chicken and 1/2 cup of brown rice

I've never heard about the warm water and lemon drops, but what you're planning on doing sounds good. I would add veggies to your dinner, and add a piece of fruit either for breakfast or a snack. Veggies are great because they'll provide you with healthy nutrients that don't come with a lot of calories. The best ones will be the non-starchy ones, so lay off on the potatoes and corn, and go for the deep colors. That means in your salad, make sure it's not just iceberg or romaine lettuce- spring mix and spinach are my faves.
Don't forget to mix up what you're eating, otherwise you'll get bored and more prone to stray from what you're trying to eat. A recent dinner that I had that was tasty was slices of eggplant and some sliced mushrooms sauteed in olive oil, then I pour some basic marinara sauce (with a bit of basil and garlic) over it, and sprinkle with a little parmesan. It's kind of like a healthy version of eggplant parmesan, plus the mushrooms.
Soups are also a great way of tricking your body into thinking it's full because you're filling up on liquid, and as long as it's a clear(ish) broth they're usually pretty healthy.

Your diet is pretty healthy, but I will suggest some modifications
1) Eat a heavy breakfast early in the day. This will prevent you snacking on unhealthy stuff later
2) Eat a snack between breakfast and lunch (preferably the apple)
3) Reduce the quantity of lunch
4) Eat a very light dinner, with very low carbs (ditch the brown rice)
20 lbs in about 11 weeks is a doable goal. Add some resistance training to your exercise regimen 2-3 times a week.
