I've been asked to do an Anniversary dinner a deux, for two vegetarian friends of mine. As I'm a dyed-in-the-wool carnivore,are these menus balanced, and, if a veggie, which one would you eat it?!!
A roasted red pepper soup with homemade granary bread
Main course
Stuffed Portabello mushroom with a herby, garlicky stuffing , courgette ribbons (yellow and green) wilted spinach, and roasted cherry tomatoes on the vine with a fresh pesto dressing
Fruits of the forest cheesecake
OR
Mixed wild mushroom pate with melba toast and salad garnish
Main course
Greek style vegetarian Feta and spinach pie with filo pastry, tomato salad and mixed green leaves
Lemon mousse cake with raspberries for pud
Everything will be homemade, bread, pasta, pesto etc.Help from Vegetarians please!!?
I would have the soup, the pie and either (or both) of the puddings! Not a massive fan of stuffed mushrooms and it seems to be what restaurants always like to offer as the veggie choice. The pie also means I am getting some iron from the spinach.
Either way excellent menu and I would really love the fact that you had made an effort and home-made everything.
The first one sounds better to me, and is also more well balanced nutritionally. I would suggest doing a combination of stuffed mushrooms and stuffed squash (small ones, like patty pan, etc.) though, instead of just mushrooms.
The second one seems to be heavy on dairy and refined grains and not enough vegetables. The main course %26amp; dessert sound yummy to me, but I can't get on board with the mushroom pate %26amp; melba toast. I'd probably prefer the lemon cake over the cheesecake too.Help from Vegetarians please!!?
