I cant seem to eat 1500 calories in a day...?

I'm on a diet and I'm supposed to be eating 1500 cals/day. It was no problem before because I used to eat junk food, but now that I'm eating healthy foods I am finding it really difficult to eat that many calories. Yesterday I ate 1040 and today I only got up to 1245... I get really full with every meal and I dont really like that feeling..

Heres what I had today:

Breakfast: Greek yogurt- 120 cals

Cherries - 90

Coffee - 100

Lunch: Couscous Burrito - 350

salad w/ dressing - 60

snack- carrots 35 cals

Dinner: Burrito again 350

carrots 35

cherries - 90

Altogether it was 1245 cals... how can I put in more calories without overstuffing myself??I cant seem to eat 1500 calories in a day...?
Add a little bit more of meat. You'll break down if you wouldn't eat meat much.
The thing about vegetable %26amp; fruits you can eat and eat and be full and then their hardy any calories! Thank you nature for the dieters miracle foods, water, fruits and vegetable!

The thing with small frequent meals is they keep you full! You doing practically everything your supposed to in a diet. Maybe this is a good thing? If you really must eat do things like add stuff to your coffee or have ranch with your carrots.I cant seem to eat 1500 calories in a day...?
Try spreading it out in 5-6 meals daily, spreading the meals out about 2-3 hours apart. Make sure that through each of your meals your getting the overall required amount of calories. That requires simple calculation.

This way, you have time to rest after each meal and you wont be full all of the time.
