I cant seem to eat 1500 calories in a day...?

I'm on a diet and I'm supposed to be eating 1500 cals/day. It was no problem before because I used to eat junk food, but now that I'm eating healthy foods I am finding it really difficult to eat that many calories. Yesterday I ate 1040 and today I only got up to 1245... I get really full with every meal and I dont really like that feeling..

Heres what I had today:

Breakfast: Greek yogurt- 120 cals

Cherries - 90

Coffee - 100

Lunch: Couscous Burrito - 350

salad w/ dressing - 60

snack- carrots 35 cals

Dinner: Burrito again 350

carrots 35

cherries - 90

Altogether it was 1245 cals... how can I put in more calories without overstuffing myself??

I also dont eat red meat or pork...I cant seem to eat 1500 calories in a day...?
Add some cheese to the burritos.

A slice of toast and peanut butter with your breakfast or instead of the carrots as a snack

Mix xome muesli into your morning yoghurt.
Put some Muesli in your yogurt(you could use the extra fiber, because your diet's low on fiber which isn't good for your bowels), and that'll give you nearly 300 kcals without much effort.

Also try and give some allure to your snacks, just carrots is a little too one-sided, a hand of nuts, again easy calories, and very healthy.I cant seem to eat 1500 calories in a day...?
Well, is your diet to lose weight or gain weight? Eating a bit below will not stunt weight loss, but if you want to gain more calories through out the day just add in little things, Breakfast should be the highest concentration of any meal. So instead of yogurt and cherries try 4 eggs, which is 360 calories. or two eggs and a piece of whole wheat toast.
You can add more oil or butter to your foods, as well as sauces. You can cook some foods yourself and add whatever you want to it also.
you seem to be alright by eating the right things... like me, but counting the calories will not help you to lose weight... walk and walk..... 30 minutes a day Morning ) and if possible even more at PM.
