I'm making a Greek Salad for supper and the recipe for the dressing calls for dejon mustard. I don't have any dejon mustard, but I do have mustard seed and powder and normal mustard. Is there an alternative to dijon mustard? I also have LOTS of spices. Here's what the dressing calls for:
6 tablespoons Olive Oil
1 teaspoon Garlic Powder(I don't have it, so am using fresh garlic)
1 teaspoon Dried Oregano
1 teaspoon Dried Basil
1 teaspoon Dijon Mustard
1 teaspoon Fresh Lemon Juice
1 1/2 cups Red Wine Vinegar

Personally what I would do for this is to add 1 tsp. either yellow or brown mustard and 1 tsp. mayonnaise . Because that is all dijon really is . I know some here won't approve , they think it is more complicated than it really is . However this kind of recipe is needing that tiny bit of mayo for contrast and consistency .
use the mustard powder- you can add as is, and i would still add a full tsp, perhaps a bit less if you don't like the tang...
on another note, fresh garlic works best, but best to use a motar and pestle with a bit of salt to make it into a paste, for this amount i wouldnot use more than one decent size clove, or else it will be overpowering. if you slice in half first and take out the 'stem' in the middle it will help with 'burping'

Use a tsp or so of the dry mustard powder. In salad dressings, mustard is an emulsifier that helps keep the vinegar and oil mixed up and in suspension.
A little bit of regular mustard will do. And a dash of pepper. Good Luck and enjoy dinner...
